Switzerland uses Suteria robots to make cakes

What kind of sparks will the Swiss cake with a century-old formula and tall industrial robots create? Suteria is a well-known Swiss dessert workshop brand. Its most famous dessert is the 100-year-old Solothurn cake. This cake defeated the rest of more than 1,400 pastries in the Swiss Baking Competition in 2010 and won the first place.

During holidays, Solothurn cakes are in short supply. Suteria's pastry chefs have to work overtime to make the cakes. The unique base and surface shape of Solothurn cakes needs to be manually made with a piping gun. Complete, the whole process is monotonous and time-consuming and laborious. By chance, Mr. Manfred Suter, the founder of Suteria, saw a FANUC robot decorating syrup on a cake in a bakery in Germany. Suter realized that his workshop could also use automated equipment to complete part of the work. "When traditional processing techniques can be perfectly combined with robots and still ensure the original taste of the cake, why not?" Suter said.

In the end, Suteria chose the clean model LR Mate 200iD/7C of the FANUC LR Mate series of universal mini robots, which is especially suitable for food processing. The robot with a maximum load of 7 kg and a reachable radius of 717mm has a white shell that has undergone a special anti-rust treatment and uses special lubricants for food production to ensure zero pollution to processed foods. The robot unit also includes a special decorating gun and a hose for cleaning. Like other pastry chefs, the LR Mate robot put on a white "chef robe" and was ready to start work.

First, the operator sets the size of the cake on the touch screen. There are 6 sizes, ranging from 12 to 26 cm in diameter. Then the mixed hazelnut and meringue batter is loaded into the decorating gun fixed at the end of the robot arm, and everything is ready Then the operator presses the start button. The LR Mate robot, which is as agile as a human arm, carries a piping gun to make a circular motion from small to large, pressing the batter onto the baking tray in circles. Depending on the size of the cake, 8 to 12 batter pans completed by the robot can be placed on the bakeware. Finally, the full bakeware will be sent to the oven, and the empty bakeware will continue to be sent to the robot cell. Carry out the next cycle of operations.

In order to ensure the freshness of the products, Suteria adopts a build-to-order model. The robots usually work for about 10 hours, and additional shifts are added during holidays. "We have gained reputation through traditional craftsmanship, and now robots have also joined them. While ensuring the quality, more varieties of pastries have begun to be made by robots. This has also expanded our business to a certain extent." Suter said. In 2014, Suteria opened its first branch in China (Sudria Swiss Handmade Chocolate). Swiss Sweet from the robot hand will give it a try if you have a chance!
